OCTOPUS SALAD WITH FAVA BEANS & AVORO AVOCADO OIL MARINADE

1 Clean Octopus boiled in pressure cooker for 45 minutes

1 Can of Fava beans drain

3 large potatoes: steam and  soft at room temperature

2 Cloves of Garlic fine minced

2 tbsp chopped parsley

½ Cup of AVORO Avocado Oil Marinade (see recipe)


Procedure

  1. In a bowl place AVORO Avocado Oil Marinade and sliced octopus.
  2. Add fava beans, garlic and parsley. Gently mix well until all the ingredients are well coated.
  3. Serve on top of potatoes and touch up with salt & pepper to taste and add a splash of extra-virgin AVORO Avocado Oil.
